Our pigs and calves
PORK: At Cárnicas Lifara we breed our own pigs since the eighties, because we are sure that only this way we can serve the kind of pork we want.
That way we can control the animals´ diet and wellbeing throughout the rearing, the handling, the weight at the time of slaughter, the breed (which determines the fat infiltration within the meat, the appearance, and the channel configuration), etc. That way we can offer the kind of pork that characterises us: medium sized, pink and not too exudative meat, with fat infiltration and soft flavour.
VEAL: At Cárnicas Lifara we breed our own calves since the year 1994. For us this is the only way to obtain the kind of veal we want to offer in our premises. As it is the case with the pigs, only this way we can control the animals´ diet, handling, weight at time of slaughter and the breed.
Only by breeding our own calves we can select the crossbreeding which will provide us with a kind of channel which agrees with the quality we want to offer in our premises: a red, greased, not excessively big meat, and with FLAVOUR.

Fresh cold meats

FRESH LONGANIZAS (SAUSAGES)
Made 100% with pork meat and stuffed in natural tripe. Lightly spiced, juicy and tender. Ideal to grill, barbeque or cook.

FRESH CHORIZO
Made 100% with pork meat and stuffed in natural tripe. Tender and juicy, with a soft and pleasant flavour. Ideal to barbeque or as an accompaniment to other dishes.

GUAJILLO CHORIZO
Made 100% with pork meat and spiced with guajillo chilli, which gives a fun and characteristic spicy flavour. Ideal for barbeques.

ARAGON FRESH LONGANIZA
Made 100% with pork meat and stuffed in natural tripe. With intense scent and the characteristic flavour of the Aragon longaniza. Ideal to grill or barbeque, or as an accompaniment to other dishes.

Chistorra
Made 100% with pork meat and stuffed in natural tripe.
Lightly spiced but with the chistorra´s intense scent and character.

HAMBURGERS
Different types: pork and veal mix, 100% veal, 100% chicken, etc. Very juicy and with an intense and characteristic flavour.
Cured cold meats

CANTIMPALO CHORIZO
Cured cold meat, made mainly with pork meat and with a little proportion of veal meat. Stuffed in natural tripe and with a long and balanced curing process. Intense flavour and scent.

CURED CHORIZO
Made mainly with pork meat and with a little proportion of veal meat. Stuffed in natural tripe and with a long curing process. Ideal to eat raw, with all the typical chorizo flavour and scent.

ARAGÓN CURED LONGANIZA
Made 100% with pork meat and stuffed in natural tripe. Lightly spiced but with a characteristic and intense flavour and scent from the traditional Aragón longaniza.

SPICY CHORIZO
It has the same characteristics as the cured chorizo, but it has been spiced with Vera paprika, which gives it a characteristic flavour. Ideal to be consumed raw.
Cooked cold meats

Morcilla (BLACK PUDDING)
Made the same way that our great-grandparents did, with rice, blood, fat, onion, pine nuts and spices. Ideal to be consumed fried or raw. Our black pudding is recognised all over the Valdejalón region.

Fardeles
Prepared from cooked pork liver, longaniza paste, pine nuts and spices. They´re made according to a typical Calatorao (Valdejalón region) recipe, which our grandmother passed on to us.

FRANKFURT SAUSAGES
Made with mince pork and veal meat, and stuffed in natural tripe. We use a traditional mincer, which allows to distinguish the different meats. They have the characteristic intense flavour or Frankfurt sausages, but with a greater quality.

YORK COOKED HAM
Made with the noblest parts of lean pork. Soft and juicy flavour.

COOKED VEAL TRIPE
Made from veal's tripe, trotters and snouts. Seasoned with serrano ham. The trotter´s characteristic jelly adds great juiciness.
